Procrastination can be a friend and an enemy to every kind of creator lol. But if you spend time thinking about something a lot, it can only get better.
As for the size for the fics you probably are right. I might have read it wrong, or just straight up misunderstood it, so go with whatever you think is the best choice. Take as much time as you need to to finish them, there's no hurry. I'm just thankful that you're taking the time to do them. There aren't too many fanfics on FF that have covers, so it'd certainly bring in some new readers.
